Turn Off Annoying Changes in Lion with Lion Tweaks

Although Lion has some cool new features, some of the changes are just annoying. A new app called Lion Tweaks lets you easily turn on or off some of the new features in Mac OS X Lion 10.7. Some of these features include enabling 2D-Dock, show the user Library folder, disable spelling correction, enable permanent scrollbars and change iCal leather to aluminum. Lion Tweaks is a free utility available from iFredrik.com.
TinkerTool is another cool app that gives you access to hidden preference settings Apple has built into Mac OS X Lion. TinkerTool has been updated recently and supports Lion.
